Simple Food Prep

I used to cook breakfast every morning and dinner every night from scratch. However, I’ve found that when my life gets overwhelming, when I’m overstimulated, when I get home and I’m so done with masking that I have lost all energy, cooking is the last thing I’m able to do! However, going out to eat every night is neither feasible nor healthy nor life-giving. What’s an autistic person with blood sugar issues to do? Find the simplest things to make that taste good and nourish you. My go-tos are peanut butter and jelly sandwiches, steamed broccoli with tamari and sriracha, cashew milk oatmeal, and Amy’s meals. One day I’ll get back to cooking, but I’m not going to beat myself up for it in the meantime!
